Matcha Coconut Bark

This mouth watering matcha coconut bark is delightfully crunchy, with just the right amount of sweet, and no sugar added. Pretty quick and easy to make, too!

Last week on Instagram we shared @hesterbyaustin's mouth watering matcha coconut bark...and this week she's letting us share the recipe!

They're delightfully crunchy, with just the right amount of sweet, and no sugar added. Pretty quick and easy to make, too. Check em out:

Ingredients:

  • 1 cup coconut flakes
  • 1 tsp matcha (culinary grade)
  • 1 tsp vanilla extract
  • 1/2 c puffed quinoa

Preparation:

  1. In a blender or food processor, blend coconut, matcha, and vanilla until smooth
  2. Stir in quinoa
  3. Press mixture into tupperware
  4. Freeze until set
  5. Cut and enjoy!  Store in the freezer.
