We've shared a matcha cold oats recipe before...but this one's got an extra cool spin with how to prep it! AND it was submitted by one of our readers, which is extra awesome. (Speaking of, if anyone has recipes to share please do email me!)
Mick says he preps 7 of these each week to serve as his breakfasts...which makes them super convenient for quick and/or on-the-go mornings. Check em out:
(recipe is for 1 serving)
Ingredients:
- 1/2 cup rolled oats
- 1/8 cup chia seeds
- 1/8 cup cocoa nibs
- 1/8 cup coconut shavings
- 1/2 tsp matcha powder (culinary grade)
- 1/2 tsp camu camu powder
- 10 brazil or other nuts
- cinnamon
- raisins
- goji berries
- inca berries
- pumpkin seeds
- whatever else you want!
Preparation:
Step 1: Prep
- Combine all ingredients in a mason jar (or other sealable container)
Step 2: Store for later
- Close the lid and store it in the refrigerator. I make 7+ at once for the entire week.
Step 3: Mix and enjoy cold!
- Add 1/2 banana chopped however you want
- Add 1 cup cold water (2:1 ratio of water to oats) or just fill the jar to the top (you’ll figure this out over time depending on how watery you like it)
- Close and shake well
- Put in the ‘fridge over night
Step 3 alternate: Mix and enjoy hot!
- Add 1/2 banana chopped however you want
- Add 1 cup hot water
- Close and shake well
- Eat right away
Weekly meal prep is all the rage these days. Breakfast doesn't get much healthier than this!
